Cinnamon Raisin Scones

Well, it's been awhile since I last posted!   Here are some pictures from over the summer and a recipe!

I took this picture when my cousin had a birthday party at the swimming pool.

My sister and I went to my cousins house for a week.  It made for a lot of late night movie watching and laughing until we couldn't breathe!

Although we did go for a walk now and then!  These are some pictures that I took down at the creek on one of our walks.

I got so many pictures it took awhile to sift through them all!  I was finally able to narrow it down a little.

It was such a beautiful day I didn't want to miss any pictures!  So I took way too many!
I couldn't decide if I liked the original or the black and white?  Which is your favorite?

These scones are amazing!  My Mom had the idea to use a biscuit recipe and add cinnamon and raisins, and top them off with some icing.

It went together very well.  I will definitely be making these again!

You should make some of these! Soon!

Now for the recipe.

Cinnamon Raisin Scones

1 1/2 C.  Whole Wheat Flour
1 1/2 C. White Unbleached Flour
3/4 tsp. Salt
3 tsp. Sugar
6 tsp. Baking Powder
1 Tbsp. Ground Cinnamon
1/2 C. Raisins
3/4 C. Butter
1 C. Milk

Mix together all of the dry ingredients. Add the raisins.  Next, cut in the butter.
Add the milk and stir just until combined.
Form into biscuit shape with hands, or roll out onto floured board and cut with biscuit cutter.
Place onto un-greased cookie sheet.
Bake at 450*F for 10-12 minutes.
Makes 9-12 biscuits.

For the icing:
1/2 stick Butter, melted
1/4-1/2 tsp. Vanilla

Add enough powdered sugar to make it a little too stiff to pour.
Add a splash of milk to thin it out again.
You want it to be pourable, but not too runny!
Pour over the warm scones.
Enjoy! :)

I hope you all had a Happy Thanksgiving with family and friends!   Let me know if you try the recipe!  You really should try it!

Poudre River, Colorado

Last summer my family and I went to Colorado on vacation. We stayed with a friend in Fort Collins for a couple of days, driving along the Poudre River, and through the Rocky Mountain National Park. Then we drove down to Colorado Springs and stayed at a motel in Manitou Springs. We visited the Garden of the Gods, and the Manitou Cliff Dwellings. The pictures on this post are from the Poudre River area.
This first picture is from when we stopped along the Poudre River on our way up to the top. I liked how the rocks, pine needles, and plants looked in the sunlight along the river bank.

This one is also from when we stopped along the river bank, I liked how they were all lined up.

Also from the first time we stopped. The water was cold!
Another shot of the river.

The rocks in the river.

Rocks leading down to the river.

The path that led to the river.

Some Penstemon that was growing along the river.

One of my favorite shots! This was the view looking towards the river.

A cactus that we found along the trail towards the river.

Another view looking towards the river.

One more!

This was a picture I had taken earlier on our way up.

When we were first entering the mountain we saw farms and some crops.
This is of a corn field.

Also from when we first got into the mountains.

This was when we were headed back to Fort Collins, if you look close you can see some horses.

This was called Profile Rock, if you look close you can see why.

Another of my favorite views! This was one of the more open places on our way up to the top.

Also from the same area.

I liked the aspen trees!

Some pine trees with the sun peeking over the mountains.

I can't remember exactly where this one was taken, but it is one of my favorites.

This was when we reached the top! It was beautiful!

This is also from the top, the peak you see is Horsetooth Mountain.

I hope you enjoyed! I have lots more that I hope to get up soon!
God Bless!

A trip to my Aunt's, part 1

Earlier last week we took a trip to my Aunt's house. These are all pictures from then, except the first one was from our timber.
With this first image it was getting dark and I slowed the shutter speed a bit and focused, then pushed the shutter down and zoomed at the same time, creating the "zoomed" effect.
This creek bed was at the end of my Aunt's property. It was covered with rock and moss, plus the fallen limbs add to it!

This is a seed pod off of the tree in their front yard.
This is also at the creek, I love the roots of the tree among the rocks.

Also at the creek, as you will see alot of these are! A bunch of different shaped and sized rocks, also different shades.
This was one of the few green plants at the creek, I thought it looked nice against the browner leaves and twigs.

One of my favorites, the rock bed in the creek covered in moss.

Another of the creek. The rocks, the fallen limbs, the brush on the edges, and the pine tree to the right all play into this one.
Another favorite of the creek! I liked the white limb hanging down and the creek going back into the picture.

The barn was a favorite too! I have too many favorites. I liked the way the barn looked with the tree limbs hanging down in front of it.

These weeds in front of the barn were really bright and colorful, they went with the dull color of the barn good.

The bricks of the house.

If you will notice there is a buzzard resting on the peak of the barn, I was able to get a few shots of him before he flew away.

Come back in a few days for part 2!
